Strawberry Cookie Cups

Cupcakes of strawberry cookies are bite-sized sweets with the finest strawberry buttercream icing ever. There are no finer strawberry cookies than these, which are made with fresh strawberries.

One of my all-time favorite summer sweets is Strawberry Cookie Cups. Who am I fooling, though? All year long, this is one of my favorite sweets! Do they look like cookies? Or are they ice cream scoops for this delectable strawberry icing? In any case, they’re extremely tasty and quite simple to make.

The recipe is divided into two parts: a cookie foundation and a strawberry icing. To make it simpler to follow, I divided the components below.

Ingredients for Cookie Cups

To create strawberry cookie cups, you’ll need the following ingredients:

— butter – I like salted butter, but you can use anything you like! 

— flour

— 1 egg

— essence of vanilla

— sugar granules

— salt

— baking soda and powder

Strawberry Cookie Cups Recipe

With an electric mixer, cream the butter and sugar until creamy (1-2 minutes). Set aside after adding the egg and vanilla.

Combine the flour, cream of tartar, baking soda, cinnamon, and salt in a separate basin. Slowly add the dry components to the wet ingredients and blend on low speed until well mixed.

Scoop the dough into 36 balls using a tablespoon cookie scoop. Place each ball in a well-greased small muffin tray after rolling it in the cinnamon/sugar mixture. 

Preheat the oven to 350°F and bake for 12 minutes, or until the sides are golden brown. Make an indention in the top of each cookie just after it comes out of the oven by pushing the back of a tablespoon into each cookie cup. (If a tablespoon feels excessive, try 1/2 or 3/4 of a tablespoon.)

After chilling for 3-5 minutes, carefully lift each cookie cup out with a knife and put on a wire rack to cool.  

Fill the cookie cups with icing and enjoy!

Ingredients for Strawberry Buttercream Frosting

To create strawberry buttercream frosting, gather the following ingredients:

— butter

— essence of vanilla

— granulated sugar

— cold strawberry puree

How to Make a Strawberry Puree Reduction

Making a strawberry puree and then reducing it is the key to obtaining the bright, fresh strawberry taste in these cookies. This method removes a lot of the water from the strawberries, leaving us with a thick strawberry puree that we can utilize in strawberry frosting. This procedure takes approximately 30 minutes, after which you’ll need to cool the reduction completely, so it’s best to start this the day before.

Strawberry Preparation

All you have to do to create the pureed strawberry reduction is wash, core, and slice 30-35 strawberries.

Using an immersion blender or a food processor, puree the strawberry chunks. Make sure there aren’t any pieces left.

To remove the water, bring to a low boil.

In a small saucepan, bring the strawberry puree to a boil. Reduce the heat to low and continue to cook for another 20 minutes, stirring periodically.

The mixture will be cut in half. My puree was slightly over 2 cups before reduction, and 1 cup after reduction.

Refrigerate or freeze the puree before continuing with the Strawberry Frosting recipe.

Strawberry Buttercream Frosting Recipe

Begin by whisking the butter with a mixer for 30 seconds. 2 cups powdered sugar and the strawberry reduction (see how to prepare the reduction below). Recombine the ingredients.

A cup at a time, add the vanilla and remaining powdered sugar until you achieve the desired consistency.

For cakes, I like to keep the frosting a little softer and add a little more powdered sugar while piping the icing.

Refrigerate the frosting in an airtight container until you’re ready to frost your cookies.

If you’re icing cupcakes, a little thicker frosting will retain their form better. If you’re icing a cake, though, I’d add extra milk—3 TBSP or perhaps 4 TBSP—to ensure that the frosting spreads evenly.
